This display, undertaken as part of the In Their Own Image: Greek-Australians National Project, provides a stimulating insight into the development of the Greek café in Australia from the 1890's through to the present. Through the use of historical and contemporary photographs, café objects and a 5 minute DVD presentation, the display highlights the evolution from Greek-run Oysters saloon, to soda/sundae 'parlors' and milkbars, which culminated in the Greek café. These cafes became particularly synonymous with rural Australia. They were also a 'Trojan Horse' for Americanisation in regard to eating and social habits. The display features food products popularized through the café.
